A big strength of AW is that it uses the rules and playbooks to direct the fiction in certain ways.
Take a look at the angel playbook. Sure, it could just be "medic". But by calling it Angel, and giving it moves like "touched by death" and "professional compassion", and especially the sex move, it says something about the setting and the character.
The Angel playbook tells us that the Apocalypse world is a harsh place. That when someone binds your wounds, it's a goddamn miracle. And it tells us that the angel is a sad, lonely character -- someone who mostly connects with people only when they lay dying on an operating table.
If you use your method, that's what you'll be loosing out.
